Salt Cod

Cod, also known as “Bacalhau” or “Bacalao” is the king of whitefish, renowned for its texture, relatively large size and white color. Cod has a mild taste that goes well with many different types of garnishes and flavorings. It’s also great prepared in the Portuguese style and simply topped with some olive oil.

We produce our cod from top quality raw material, much of which is caught by hook and line. Bone-in cod is normally sold in bulk cartons and salt cod fillets are packed into traditional wooden cases and retail packs.

Salt Pollock

Pollock is popular as a less expensive alternative to cod, with similarity in taste and texture. The size and coloration of pollock varies, depending upon the fishing area. Pollock is prized for its mild taste, consistent quality and ease of preparation as fillets. Pollock also lends itself to a wide range of salted fish recipes. We offer a range of pollock retail packages in assorted sizes.

Salted Hake

The type of hake that we use for salting is unique to the Western Atlantic Ocean. It is a large fish, similar to cod or pollock, but with a distinctive color and appearance. We offer salted bone-in Hake, and also hake fillets in a variety of different cures to suit different market requirements. Hake is known for having a longer shelf life than cod or pollock.

Salt Cusk

Cusk is another deep water fish native to our cold, North Atlantic waters. It is distinctive because of its special fin structure and rounded tail. It has a firm, white flesh similar to cod, but a unique taste and texture. We offer bone-in salt cusk and also salted cusk fillets.

Salt Ling

Ling is a tasty and lean, white-fleshed fish similar to cod, but with an elongated appearance. The species of ling that we sell is native only to the cold water of the North Atlantic Ocean, and it is found at deep water depths.

We offer bone-in ling in different cures depending on market requirements and we also provide salted ling fillets.

Mackerel

Atlantic mackerel is harvested in the North Atlantic. It is a pelagic fish and therefore found at shallower water depths than most of our whitefish species. It is caught seasonally in a combination of inshore and offshore areas. Mackerel is an excellent source of Omega-3 fatty acids.

Our Eastern Sea Products facility, acquired in 2006, specializes in the production of salted mackerel in bulk pails and retail packs. Our Seapro brand has been the market leader for many years.

Herring

Herring is a smaller fish, also native to the North Atlantic Ocean.  Seasonally harvested along the coasts of all of the Atlantic Provinces, herring is high in Omega-3 fatty acids.
